Banana, Cinnamon & Oatmeal Pancakes – How To Be Healthy The Yummy Way.

Mmmm! These Banana-Oatmeal Pancakes are one kid-friendly healthy recipe that’s packed full of nutrients. Definitely worth cooking up for the family on a lazy Sunday morning.

Preparation time: 10 minutes
Cooking time: 8-10 minutes
Makes 4 servings

Ingredients

1 1/2 cups Buckwheat flour (Or any flour you like)
1/3 cup wheat germ
1/3 cup quick-cook organic oats
½ tsp cinnamon powder
A pinch of celtic sea salt
1 ½ cup milk (Almond milk okay too)
1 ripe banana (peeled & mashed)
3 tbsp maple syrup or honey
1 tsp olive oil

Procedures

1. Mix wheat germ, oats, cinnamon, salt and baking powder in a large bowl.
2. Add the beaten eggs, before whisking all the remaining ingredients together.
3. Pop some low salt butter or coconut oil in a fry pan and heat.
4. Pour the batter into the hot fry pan in small amounts to make an individual pancakes. Flip the pancake when the edges seem to look slightly dry.
5. Cook until it becomes golden brown, about two minutes for each side.
6. Try using little shape cutters and cutting the pancakes into pretty shapes for the kids.

Health Benefits

Bananas are very healthy and a great source of soluble fiber, essential vitamins and minerals. Bananas also help relieve gastrointestinal or GI distress.

Wheat germ contains essential vitamins and minerals.

The milk is a rich source of calcium, excellent for your children’s bones and teeth.

Maple syrup contains polyphenols and antioxidants, which are known to effectively fight off free radicals in the body. Please make sure you get only the genuine maple syrup – not the ‘maple flavoured syrup’ they sometimes sell. Maple syrup comes from real trees in canada and it’s this maple syrup which has the goodness, the other maple syrup is definately worth staying away from!

I’d prefer to use organic honey rather then maple syrup anyway, because the organic honey has vitamins, minerals, pollens and protein.  Some of those vitamins & minerals present are C, B6, riboflavin, niacin, thiamin, calcium, iron, copper, manganese, potassium, phosphorus, zinc, sodium and 22 amino acids! Now who won’t be stocking up on organic honey?!

***By the way make sure it’s organic and not heat treated otherwise the honey looses all of these nutrients.

Lastly, cinnamon, my favourite magic powder! It used to be used as an embalming agent in ancient Egypt! Cinnamon helps reduce blood sugar levels and is effective against ulcer-causing H. pylori bacteria. It has iron, vit C, K and manganese. Apparently it helps with Type 2 Diabetes too!

**Put 1/2 teaspoon of cinnamon in warm milk before bed zzz… zzz… zzz…  healthy and useful! 🙂
